Our CJB (Colin James Bishop) Sparkling Chardonnay is named for the 1st generation of the bishop family on the property, in honour of Colins dedication to Coolangatta Estate.
This Sparkling Chardonnay has spent 4 and half years on lees yeast for its secondary fermentation in accordance with a late disgorged traditional champenoise method. It currently shows aromas of bread, brioche, biscuit and citrus extending deep into the palate creating a fresh lifted lemon front of mouth.
